Well, I can’t believe I’ve finally done it!
My blogging saga has begun.
Since I first started opening up and sharing my love for all things health & fitness with you guys on Instagram, I’ve gotten tremendous response (and by that I mean a lot more than I expected).
But its clear to me that there is one topic you’re all curious about more than anything else.
The most common questions I get by far are regarding what I eat to stay healthy and fit.
So, I felt it’d only be appropriate to start with a recipe.
But not just any recipe, oh no. I couldn’t let you guys down! This recipe is something special; one of those heavenly creations sent from the Gods. *cue singing angels, rolling clouds and sunshine blazing through*
Now, what would be a good word to describe a tastebud orgasm? Idk. But that’s exactly what this soup gives me.
Trust me, I’m not one to underdeliver, and with a name like Orgasmic Tuscan White Bean Soup, this recipe had better live up to it’s name.
But I guess you’ll just have to be the judge of that yourself.
I’ve been making this soup a couple times a week for about a month now and I swear it’s bomb flavor never fades on these tastebuds.
What would be a good word to describe a tastebud orgasm? Idk. But that’s exactly what this soup gives me.
Of course being the absolute health-nut I am, I may end up adding in some tid-bits on nutritional value + general health benefits to some my recipes every now and then to help educate you and allow you the ability to choose meals that meet your goals (i.e. this soup recipe is excellent for weight loss, toning up, lean muscle gain, or for pre or post-workout energy) but i’ll keep it short and to the point, so you can always skip past if it isn’t your thing, or if you’re just hungry af and ready to EAT.
I’ll do my best to keep all my recipe entries short in general for this same reason (hopefully this intro entry will be considered one of the longer ones).
So without any further ado, read on my friends, and get ready to take ownership of an addictingly delicious & ultra-nutritious culinary masterpiece chefed by your own two hands.
Orgasmic Tuscan White Bean Soup
This 30 minute Orgasmic Tuscan White Bean Soup is ridiculously delicious, super healthy, packed with energy, and will leave you wondering how you even did it, you superhero, you.
Total Time: 35 min Prep Time: 10 min Cook Time: 25 min
- 2 medium sweet potatoes
- 1 large red onion
- 1 large yellow onion
- 2 cans cannellini beans, drained and rinsed
- 4 ribs celery
- 4 cups vegetable broth
- 3 cloves of garlic
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- Prep ingredients by boiling 4 cups of vegetable broth. Peel and cut sweet potatoes into 1/2 inch cubes. Slice onions, chop up celery and garlic, followed by rosemary and thyme.
- Heat olive oil in a large pot over medium heat. Add in sweet potatoes, celery and onions, stirring often, for about 5 minutes (or when the onions start to become translucent). Mix in rosemary, thyme, garlic, salt and pepper and cook for 30 seconds. Stir in cannellini beans and broth.
- Increase the heat to high and bring to a boil. Cover, reduce heat to a simmer and cook for 20 minutes.
- Toast ciabatta bread for a complimentary side, and serve.
