Breakfast Chia Pudding

 

 

 

By now we’ve probably all heard that breakfast is the most important meal of the day, but honestly, who has time for that?

This is a super easy recipe I’ve depended on for days that I know I’ll be busy and either won’t have time for, or might just forget to make breakfast.

By taking 3 minutes to prepare it the evening prior, it’ll be all set and ready for you in the morning when you’re ready to run out the door.

If you’re someone who opts for workout sessions after work, you may keep a mason jar of it in your work fridge to wolf down as a delicious, energy-packed pre-workout snack before the end of the day.

This is a phenomenal option for workout energy as chia seeds are a quick and easy-to-use source of protein, loaded with healthy fats that can be used as fuel; not to mention they’re also stacked with dietary fiber, minerals, vitamins, and antioxidants too!

For weight loss, this recipe is an ideal breakfast option.

All those vital nutrients I mentioned aid in maintaining a healthy weight & are crucial for energy metabolism.

And when chia seeds are combined with liquid, they form a gel and fill up your tummy, giving you a feeling of fullness and satiety. 

Using coconut milk as opposed to dairy milk gives it an even sweeter taste, with less calories, more calcium and zero cholesterol.

Tastes like cake, quick to make & is the self-proclaimed partner-in-crime for helping you tone up.

Servings: 2
Total Time: 3 min

Ingredients:

  • 6 tbsp chia seeds
  • 2 cups coconut milk
  • 2 tbsp maple syrup

Optional Add-Ons:

  • Berries (i.e. strawberries, raspberry or kiwi)
  • 2 tbsp coco whip
  • coconut flakes

Directions:

  1. Stir all ingredients together in a pint-sized mason jar. Cover with lid and store in fridge overnight.

  2. Thanks! If you try it let me know what think! Just tweaked the recipe a bit to add the maple syrup in (it’s so much better with it!)
